Had the urge to do some cooking again, so here's another recipe.
Lentil Soup with Mushrooms & Keilbasa
2lbs dry lentils
6 oz kielbasa
8 oz sliced mushrooms
1 medium onion
1 tbsp chopped garlic
2 bay leaf
1-2 tsp extra virgin olive oil
water
salt, pepper, garlic powder, onion powder
Chop onion into medium dice, cut kielbasa in small pieces. Rinse lentils.
In a large pot, sauté kielbasa, onion, mushrooms, and garlic. When onion start to soften, add lentils, and sauté for a few more minutes. Add enough water to cover the lentils, onions, and kielbasa by one to two inches, depending on the size of the pot being used. Add bay leaf. Bring to a boil, then lower down to a simmer. Keep some water on the side, to add to pot in case the level drops too low in the pot.
Check regularly, stirring, and adjusting seasoning as needed.
Total cooking time, about an hour.
Serves eight.
